Serves 3
Ingredients:
1 tbs extra virgin olive oil
500g diced beef
1 red onion, cut into thin wedges
1 red capsicum, de seeded and sliced lengthways
250g green beans, trimmed and cut into 6cm lengths
4 garlic cloves, crushed
3 large red chilli's, finely chopped
3 tbs salt reduced soy sauce
1 tbs brown sugar
1/2 bunch basil leaves
rice vermicelli noodles
Heat 1 tbs olive oil in a wok over high heat. Add beef and stir-fry for 3 minutes or until brown. Remove from wok, cover with foil and set aside.
Add the onion, capsicum and beans, stir-fry for 2 minutes. Add garlic and chilli and stir-fry for another 2 minutes.
Cook the Vermicelli noodles according to packet instructions.
Return beef to wok with soy sauce and brown sugar. Toss well. Bruise the basil leaves with a mortar and pestle. Add the basil and cooked noodle to the wok and toss. Serve immediately.
