Makes 1 loaf
Ingredients:
2 cups almond meal
1 cup roasted pumpkin
1/2 tsp himalayan salt
1 tsp GF baking soda
2 tbs cinnamon
2 tsp nutmeg
1 tsp ground cloves
4 tbs honey
1/2 tsp stevia
6 eggs
Preheat your oven to 180 degrees celsius Combine almond meal, salt, baking soda and spices together in a food processor, Pulse until combined. Add the pumpkin, stevia, honey and eggs and pulse on low for 2 minutes. You may need to scrape down the sides a couple of times. Line a large loaf pan with baking paper and pour the batter into the pan. Place in oven and bake for 45 minutes. Once cooked leave to cool in the pan for one hour then flip out onto a wire rack.
