Serves: 2 hungover & ravenous souls, or 4 normal people (with toast)
Ingredients:
4 tbs extra virgin olive oil
4 tomatoes, diced
1/4 cup diced red capsicum
1/2 cup diced mushroom
half a red onion, diced
2 cloves garlic, minced
2 tbs fresh parsley, chopped
1 pinch of sugar or a tsp of agave syrup
400g cannellini beans
himalayan salt & pepper
4 eggs
1/2 cup diced shoulder ham
4-6 large basil leaves, ripped
Heat oil in a saucepan, add your tomatoes, red capsicum, mushroom, red onion and ham. Cook for 5 minutes or until capsicum is soft. Add the garlic, parsley, sugar, pinch of salt and pepper and the cannellini beans and cook for about 2 minutes. Butter a oven-proof dish and pour the mixture in, crack four eggs on top, sprinkle a little salt and pepper and the basil leaves on top. bake uncovered for about 15 minutes or until the whites are cooked. Dont overcook your eggs, you want them runny. Serve immediately. Yum Yum Yum:)
