Serves: A small army as a side dish
Ingredients:
1.5kg brushed potatoes, peeled and cut into quarters
a bunch of fresh dill, chopped
a bunch of fresh chives, chopped
4 tbs seeded mustard
1 cup whole egg mayo
1 cup light sour cream
3 green onions, chopped
100g fresh green beans, steamed and chopped in thirds
1 celery stalk, halved and chopped thinly
freshly squeezed lemon juice (approx 1 lemons worth)
Preheat oven to 200 degrees celsius. Boil the potatoes until just tender. Pop them in the oven for 10 minutes to take the extra moisture out so they dont go soggy in the dressing. Whilst the potatoes are drying out mix all other ingredients together in a large bowl. Remove potatoes from the oven and allow to cool. Mix in the dressing. Serve! You can make this recipe a day in advance, just dont mix the potatoes and dressing otherwise they will go soggy.
